To be honest, I think people probably don't like the thought of eating tripe because of what it is, rather than not liking the taste of it.
There aren't that many places that sell tripe nowadays - it was a lot more widespread years ago, and it's probably people who ate it when they were younger who still buy it now because they aren't bothered by this bad publicity.
Tripe is so oldfashioned now, and with people trying to eat more healthily, I don't think you'd find it on many restaurant menus, if at all.
